Peanut Butter Crock Pot Chicken

We had this for dinner last night.  It tastes way better than it sounds and looks.  Jason was surprised and Caroline liked it too.   If I made it again, I'd double the bell peppers (use a green and a red) and maybe add water chestnuts - although Jason doesn't really like them  - but I love them.  We served it with whole wheat pasta and it was very tasty.  I didn't have any natural peanut butter and used good old Skippy and it turned out fine - not sweet at all, rather savory even.  Oh and I was completely out of cumin without realizing it so I substituted a half teaspoon of chili powder instead.  Although I don't think you could even taste it and would skip it and the cumin completely next time.

It's one of those crockpot meals though that does take a little bit of prep (chopping veggies and cutting up chicken) so not one of the better ones for throwing together in 5 minutes on a workday.  But, you could do most of the prep the night before and it would be pretty easy.

I am making applesauce chicken from that website for tonight - so far it looks and smells good. have you tried it yet? If so what sides did you make with it?

We didn't like that one. There have been a few of the chicken ones I haven't liked - lemon chicken and margarita chicken were blah. But I've had more that have been great, so it's hit or miss. I think we served it with rice and a fresh veggie, if I remember correctly. How did you like it?

It wasn't a hit here either. I served with rice and beans. We did the lemon chicken too a few months ago and it was very BLAH. I'm not thinking chicken is a good crockpot meat - which sucks 'cause we really are a chicken fmaily : (

You've got to try Natural Peanut butter. You will never eat that fake crap again. The best is the freshly ground kind at Whole Foods (and almond butter is even better!)O.M.G.

Ha! We don't have any kind of grocer like that near us!!! No Whole Foods, no Wegmans, no Trader Joe's. So the natural stuff at the regular grocery store, if you can find it, is ridiculously overpriced.

Alright, well when you come next month for Volt I will have a jar of the most amazing natural nut butter waiting for you. :)

Oh and Lauren, if you knew how much peanut butter we go through in this house, you'd understand the need to buy in bulk. We go through a BIG jar in just a few weeks.
