Pot Pie For Dinner!

Chicken Pot Pie -

This was sooooooooooooo good!  And I can honestly say I've never really been a big pot pie fan but I think that it's because I've never had truly good pot pie.  Yum!

So I used this recipe but added a few things and did a few things differently:

1.  I used an additional cup of frozen corn and frozen cubed potatoes.

2.  For the chicken, I simmered it in chicken broth with onions and garlic for 90 minutes so it was shredded rather than cubed.  I reserved that chicken stock for boiling the veggies as indicated.  And then I strained the veggies out and reserved the stock again for making the sauce.  I'm convinced it helped give the dish an even better flavor.

3.  I added 1/4 tsp of poultry seasoning to the sauce - this is very important.  Oh wow!

4.  I used a baking crock rather than a pie dish because I had a LOT of filling.

5.  I slightly increased the amount of ingredients in the sauce to compensate for the extra veggies.

The verdict?  Jason and I loved it and the kids didn't hate it - which is saying something.  Bryce picked out the chicken, Caroline said she really liked it at first and then half ate it, Piper balked and then ended up eating some of it.  It will definitely be on our menu options from time to time, but it's a lot of work AND it's a winter dish, so it won't be that frequent.  But it's worth the work because it's so good.

I also used the refrigerated pie crusts as it calls for and I know some people are dough snobs but honestly, I just don't have the patience to make my own dough.  I know I could do it BUT it's just SUCH a mess and a lot of work.  I'd already made a batch of Orange Cranberry Biscotti for the kids teachers and grandparents and didn't feel like having more of a floury mess to clean up, so ready made worked just fine!  Total comfort food and wonderful.

I make the same pot pie. I love this recipe. There are a few recipes for Pot Pie on All Recipes, but this one is the best.Everyone in my house loves it ;-)
