Black Bean Brownies

Seriously folks, you HAVE to try this recipe. It sounds, frankly, DISGUSTING, but you will NOT be able to tell a difference.

Black Bean Brownies

I've always been on the lookout for a decent brownie recipe that Bryce could have since most brownie mixes require eggs and after trying using the egg replacer in a mix and having it fail DISASTROUSLY, I didn't want to try it again.

But then this week I was looking for some low fat and easy recipes and found this recipe. I was skeptical but every single review I read said you won't believe it. So I just whipped up a batch this morning and VOILA! Brownies! It was super easy since I just used my multi-quick mixer with the blending attachment to blend up the beans and water and then poured them into the mix. 27 minutes later, I had real brownies. And not just real brownies, brownies without any cholesterol and very low in fat - and let's not forget the FIBER!

Personally, even if Bryce outgrows his egg allergy I may continue to make brownies this way since it's much healthier. I'm finding that a lot of the eggless recipes I have will probably continue to be used in the long term since the results I've had have been so good. Who can forget the wonderfully moist eggless cake recipe? Every time I make that cake (with or without chips) people fall head over heels for it and beg me for the recipe. It's so easy, I feel as though it's barely a recipe.

So here's to you dessert - finding healthier eggless alternatives is NOT as hard as one would think so stop giving me a pity look when I tell you my son is allergic to eggs. :)

I can't wait to try them tomorrow...let't not tell Allen and see if he likes them! He hates anything "healthy!" Ha!
