Two Home Runs

My MIL had Piper today so we invited my FIL down too to stay for dinner in honor of Father's Day and Jay's brother, Jeremy happened to be in the neighborhood too so he joined us as well. I made Rosemary Ranch Chicken Kabobs, grilled vegetables and (homemade) Spanish Rice. YUMMM!

It was the 2nd time we'd had the rice but I'd forgotten how good it is - sooooooo much better than a boxed mix. I totally love this recipe and would eat it all the time. It kind of tastes like summer. And the kabobs? Oh wow. So tender and flavorful. We skewered it with zucchini, red onion, mushrooms, and bell pepper and it was wonderful. My MIL who admits to not being a very adventurous eater loved it all which made me happy because I'd feel terrible having someone over for dinner and then they didn't like the food.

So definitely two recipes for you to try - they come highly recommended by the all the diners in my house tonight - except the kids, but that's probably asking too much.
