The Pancake Experiment

I've always loved cooking and baking and this definitely extends to breakfast fare and pancakes are no exception. I can't tell you the last time I made plain old pancakes. My most commonly made pancakes these days are my chocolate chocolate chip (real healthy, right?). It's my own recipe, like all my pancake recipes and the kids love them and I love them, so we're all happy. At Thanksgiving I made pumpkin pancakes that were pretty good although they definitely needed to be cooked at a lower temp for longer. You cook, you learn.

So today I had a new kind I concocted in my head and wanted to try - apple cinnamon. The end product was fairly tasty, but you can't taste the apple which I guess makes sense since unsweetened applesauce is a great substitute for oil in baking since you can't really taste any apple flavor. The applesauce served to make the pancakes so moist which is a good quality in a pancake and the cinnamon really came out when you put syrup on them. I'm thinking if I made them again fresh chopped apples would probably be good or maybe even some apple pie filling. But then that gets a little too sweet and while I love pancakes, I don't like them with all that gooeyness.

Other kinds I've made in the past have been banana, chocolate banana, and strawberry which have all gone over pretty well. I use ripe fresh banana for banana pancakes and I use unsweetened cocoa powder to add chocolate to any pancake too (and I add a little sugar to sweeten them). For strawberry, I used strawberry jelly and I must say, those are pretty darn good but you have to be in the mood for them.

That said, I do have one thing about pancakes that I do NOT like. Maple syrup. Yuck yuck yuck. I feel like you're supposed to like the stuff since it's natural and has other health qualities, but I cannot STAND the taste of it. I really don't like maple flavored things either. So at my house, if I'm making pancakes, be prepared for some Mrs. Butterworth or Log Cabin on top because there will never be any maple syrup in my house.

The apple pancakes sound really good. Maybe, you could make these apples and top the pancakes with them instead of syrup. The recipe is good and I have made them several times with pork. Just a thought. Take care.

We had blueberry ones this morning. Love pancakes...and maple syrup, the real stuff! Hey, do you make your pancakes without eggs? How? Have you tried making pancakes with oatmeal and cottage cheese? I'll email you the recipe--its YUMMY but is made with eggs...Gretchen loves her some pancakes with booberries!

Do you know that the first time I had and fell in love with banana pancakes was in your and Jay's apt at UMBC?! I was staying for a visit and you made them for me and I thought they were the yummiest things ever!
