My name is Erika.....

And I'm a HUMMUS-oholic! OMG, I cannot get enough of this stuff lately. Since I started making it myself, I just scarf the stuff down even faster. Oh it's so yummy - and good for you. Lots of fiber and good protein too. MMMMMMMM!

Here is my recipe:

2 cans of garbonzo beans (chick peas) drained and rinsed
3 cloves of garlic minced
1/4 cup olive oil
1/2 cup lemon juice
6-8 T tahini (this can be found in most grocery stores) - more or less depending on how much you like tahini
3/4 tsp salt (I like kosher salt)
4-8 T water (more or less depending on how pasty you like your hummus)
1/4 tsp paprika

Heat garbonzo beans on stove until boiling. (I put in a little water but dump it out after they are cooked.)

Mix together all ingredients and puree. You can use a food processor or blender, but I highly prefer to use my Braun Multiquick (stick mixer - see note below)

Let it sit in the fridge for a little while to chill and let the flavors meld. Serve with pitas, crackers, cucumbers, carrots and whatever else you like your hummus on.

**We got a Multiquick for our wedding and barely used it - until now. Oh my gosh, this thing should be called the Hummus Maker. It makes it the exact right texture and it is so easy to use and clean up. If you like to make hummus, I highly suggest getting one of these. It's also great for stirring up the tahini when you first open it b/c it is usually seperated.
